The practical concern with bamboo is biological rather than chemical: mold and bacteria. Bamboo is porous and retains moisture readily. A steamer basket that is used, then stored slightly damp or in a confined cabinet, can develop mold growth between uses. The mold is superficial and visible, but food cooked over a moldy steamer can pick up musty flavors and potentially mold spores.
The prevention is simple: after use, rinse the steamer, then air-dry it completely before storing.
