The mineral particles add scratch resistance and a textured visual appearance but do not change the fluoropolymer chemistry of the non-stick surface.

Consumers often select granite stone pans under the impression they are buying something fundamentally different from traditional non-stick. The labeling and marketing deliberately cultivate this impression. But the PTFE degradation concerns — off-gassing above 500°F (260°C), susceptibility to scratching, finite coating lifespan — apply equally to granite stone pans. The mineral additions may extend the mechanical durability of the coating slightly, but the thermal behavior remains the same.

The safest approach before purchasing any pan marketed as "stone," "granite," "diamond," or similar mineral names is to find the product's actual coating material in the manufacturer's specs or safety data sheet. If the spec says PTFE, polytetrafluoroethylene, or fluoropolymer, the pan is non-stick by the same chemistry as standard Teflon, regardless of the branding.

For households wanting to move away from PTFE, the correct alternatives are ceramic-coated pans (verified sol-gel silica formulations, no fluorine), uncoated stainless steel, or cast iron. The mineral stone aesthetic is available in ceramic-coated versions from some brands, which are a genuinely different chemistry.
