The Misen stainless clad pan is a 5-ply construction cookware with alternating layers of stainless steel and aluminum. The cooking and exterior surfaces are both 18/10 stainless steel, meaning food never contacts aluminum directly. This design combines the heat-conducting properties of aluminum with the inert, non-reactive properties of stainless steel, producing a pan that heats evenly and poses no coating-related safety concerns.

Like all 18/10 stainless steel cookware, the Misen pan contains approximately 8-10% nickel by weight. Under normal cooking conditions, this nickel is stable and does not significantly leach into food. However, cooking highly acidic foods repeatedly over long periods, or scouring the pan with abrasive cleaners that damage the passive oxide layer, can increase nickel and chromium release. Individuals with diagnosed nickel sensitivity should be aware of this and consider 18/0 stainless or enameled cast iron alternatives.

The 5-ply construction provides excellent thermal mass and heat distribution, meaning the pan resists hot spots and holds temperature well even when cold food is added. This also means it takes longer to heat than thinner pans — preheat on medium for 2-3 minutes before adding fat, rather than blasting it on high. Proper preheating creates the thermodynamic conditions needed for food to release cleanly without a non-stick coating.

The pan is oven and broiler safe with no coating to degrade at high temperatures. It is dishwasher safe, though hand washing preserves the polished finish longer. Regular cooking in stainless, especially with fat, helps develop a seasoning-like layer that improves release over time.
