Made entirely from carbon steel — an alloy of iron and a small percentage of carbon — they contain no fluoropolymers, no ceramic coatings, and no synthetic materials of any kind. The cooking surface is raw metal, seasoned over time with polymerized cooking oil that creates a naturally non-stick patina.

The seasoning process is central to both the performance and safety of carbon steel. A well-seasoned paella pan develops a hard, smooth layer of polymerized lipids that is inert and protective. This layer prevents rust and reduces direct contact between food and bare metal. New pans should be seasoned before first use by heating a thin layer of high-smoke-point oil until it polymerizes, repeating the process several times to build up a durable base.

Carbon steel does leach trace amounts of iron into food, particularly during the initial break-in period and when cooking acidic dishes. For most people this is nutritionally neutral or mildly beneficial, as dietary iron is an essential nutrient. However, individuals with hemochromatosis or other iron overload conditions should be cautious about cooking acidic foods — tomatoes, wine, citrus — in unseasoned or lightly seasoned carbon steel, as acidic reactions can dissolve the seasoning and increase iron transfer.

Large paella pans require two burners or an outdoor burner for even heat distribution. The wide, thin base heats unevenly over a single stovetop burner, which can lead to burned centers and undercooked edges. This is not a safety issue but affects cooking performance and long-term seasoning integrity.
