The bleached vs. unbleached distinction matters more than most labels suggest. Bleached white parchment is processed with chlorine compounds, and while finished products are rinsed, trace organochlorine residues can remain in the paper. These compounds can migrate in small amounts during baking, particularly at higher temperatures or with fatty foods. Unbleached (brown) parchment skips the chlorine bleaching step entirely and is the cleaner choice, especially for frequent use.
A compostable label is worth verifying — some products claim compostability but use silicone coatings that only break down in industrial facilities, not home bins. Look for certification from recognized composting standards if backyard composting is important to you.
