The risk is slightly elevated when making a pan sauce by deglazing with acidic liquids (wine, vinegar) and reducing at high heat — but the amounts involved remain well within safe dietary limits for most individuals.

Look for a roasting pan with rolled edges for structural rigidity and include a roasting rack to elevate meat off the pan floor. This ensures even air circulation, prevents the bottom of the roast from stewing in drippings, and makes cleanup easier.
