Uncoated stainless steel is one of the most chemically stable cooking surfaces available. The "18/10" designation refers to the chromium and nickel content — 18% chromium and 10% nickel — which together create the passive oxide layer that makes the surface corrosion-resistant and non-reactive. Unlike coated pans, there is no layer that can degrade, scratch off, or off-gas at high temperatures.
The main chemistry concern is nickel. Stainless steel does release trace amounts of nickel and chromium into food, particularly during the first few uses and when cooking acidic dishes. For the vast majority of people, these trace amounts are far below thresholds of concern. However, people with documented nickel sensitivity or nickel contact dermatitis may experience reactions, and some physicians recommend that this group use titanium or enamel-lined alternatives for acidic cooking.
Aluminum core construction — the "clad" or "tri-ply" layering common in quality stainless cookware — improves heat distribution dramatically but the aluminum is fully enclosed by stainless on the cooking surface. Aluminum does not contact food in clad construction; only if the edge delamination reveals aluminum, which is uncommon in quality pans.
The practical learning curve with stainless steel is preventing sticking. The pan should be preheated until water droplets bead and skitter (the Leidenfrost point) before adding fat. Adding cold protein to a properly preheated stainless pan dramatically reduces sticking. This technique, not a coating, is how professional kitchens use stainless daily without frustration.
