GreenPan pioneered the commercial sol-gel ceramic coating under the trade name Thermolon. This coating is made primarily of silicon dioxide (silica) deposited via a sol-gel process — a fundamentally different chemistry from PTFE. There are no PFAS compounds in Thermolon, and the coating does not produce fluorocarbon gases when overheated. This is a meaningful distinction for households prioritizing PFAS elimination.

The practical trade-off is coating longevity. Ceramic non-stick surfaces perform best when treated gently: medium heat or below, wooden or silicone utensils, hand-washing rather than the dishwasher. Exceeding 450°F (232°C) or preheating an empty pan on high heat accelerates surface degradation even without producing the harmful fumes that PTFE releases under the same conditions. The non-stick performance of a ceramic pan diminishes faster than PTFE under comparable conditions — plan to replace a heavily used ceramic pan within 2–3 years.

The aluminum base used in GreenPan products is standard for the category. Aluminum provides fast, even heat distribution and light weight. As long as the ceramic coating is intact, aluminum does not contact food. If the interior ceramic surface becomes visibly worn or pitting, switching to a new pan eliminates both diminished non-stick performance and direct aluminum-to-food contact.
