Matfer Bourgeat carbon steel pans are made in France from blue carbon steel — a high-purity iron-carbon alloy that contains no coatings, synthetic materials, or fluoropolymers. The pan is sold raw and must be seasoned before use. Once properly seasoned, the polymerized oil layer creates a naturally non-stick surface that is chemically stable and inert.

Carbon steel behaves similarly to cast iron from a food-safety standpoint. It leaches trace amounts of iron into food, primarily during initial use before a robust seasoning layer develops and when cooking acidic foods. This leaching is generally nutritionally benign or mildly beneficial for iron-replete individuals, and diminishes significantly after the pan is well-seasoned. As with cast iron, individuals with iron overload conditions should be cautious about cooking highly acidic dishes in carbon steel.

The Matfer pan uses a thinner gauge than cast iron, which has practical implications: it heats faster, responds more quickly to temperature changes, and is lighter. The thinner material also means it can warp if subjected to extreme thermal shock — never run a very hot carbon steel pan under cold water. Season the pan using flaxseed or grapeseed oil over moderate heat, thin coats applied repeatedly, until the surface develops a consistent dark patina.

Daily care requires minimal effort: wipe clean while still warm, rinse briefly if needed, dry immediately on the stovetop over low heat, and apply a thin film of neutral oil before storage. Avoid dish soap and dishwashers, which strip the seasoning. A well-maintained Matfer carbon steel pan will outlast multiple generations of non-stick cookware and improve in performance over years of regular use.
