The pan is sold raw and must be seasoned before use. Once properly seasoned, the polymerized oil layer creates a naturally non-stick surface that is chemically stable and inert.
Carbon steel behaves similarly to cast iron from a food-safety standpoint. It leaches trace amounts of iron into food, primarily during initial use before a robust seasoning layer develops and when cooking acidic foods. This leaching is generally nutritionally benign or mildly beneficial for iron-replete individuals, and diminishes significantly after the pan is well-seasoned. As with cast iron, individuals with iron overload conditions should be cautious about cooking highly acidic dishes in carbon steel.
