PTFE (polytetrafluoroethylene) is a fluoropolymer — a long-chain molecule made almost entirely of carbon and fluorine bonds. At room temperature and at moderate cooking temperatures, PTFE is chemically inert and considered non-toxic by regulatory agencies. The concern emerges when the coating degrades: above roughly 500°F (260°C), PTFE begins to break down into a series of fluorocarbon gases. Some are irritants; others, like perfluoroisobutylene (PFIB), are acutely toxic. Birds are extraordinarily sensitive to these fumes and die quickly even from brief exposure.
The most dangerous scenarios are predictable: preheating an empty pan, cooking on high burners without food, searing meat at very high heat, or leaving a pan unattended while heating. Under normal cooking conditions — sautéing at medium heat with food and fat in the pan — temperatures rarely reach the degradation threshold. But these scenarios are easy to stumble into, which is why PTFE pans carry a meaningful risk even for careful cooks.
Beyond fume risk, the coating degrades over time from physical wear. Metal utensils, abrasive scrubbing, and dishwasher use all create scratches and micro-abrasions. Ingesting fragments of PTFE is considered low-risk by regulators — the particles pass through the digestive tract — but the degraded surface also performs worse and exposes more of the underlying aluminum base to food contact.
If you already own PTFE cookware, keep it for low-heat tasks (scrambled eggs, gentle reheating) at medium or below, never preheat it empty, and replace it when the coating is visibly scratched. For new purchases, ceramic, stainless, or cast iron are worth the transition.
