Most non-stick cookware is coated with PTFE (polytetrafluoroethylene), the chemical family behind Teflon. At high heat — typically above 260 °C / 500 °F — PTFE coatings begin to off-gas, releasing compounds linked to flu-like symptoms in humans and fatal toxicity in birds. For decades, PTFE was made using PFOA (C8), a persistent "forever chemical" now banned in most countries. Today's coatings use shorter-chain PFAS replacements like GenX — but independent research suggests these carry similar concerns. "PFOA-free" on a label does not mean PFAS-free.

Truly inert cookware avoids synthetic coatings altogether. Cast iron and carbon steel build a natural seasoning layer over time. 316 surgical stainless steel is non-reactive at cooking temperatures. Unglazed or food-safe enameled cast iron contains no coatings that can flake or off-gas. These materials have decades of documented safe use, whereas the full long-term profile of replacement PFAS chemistries remains under study.
